

8 thin slices good quality white bread, about 1/4-inch thick and 4x4-inches
4 tablespoons strawberry jam (or peach or apricot jam), heated
2 eggs
1/2 cup milk
Spread 4 slices of bread with strawberry jam and cover each with another bread slice. Pat it down gently to seal. Beat together eggs with milk until blended and pour into an 8-8-inch baking pan. Set the stuffed bread into the pan, turning from time to time, until egg mixture is completely absorbed.
In a buttered skillet, sauté bread "sandwiches" until golden brown on both sides. Serve with maple syrup or fresh strawberries and a dollop of sour cream. Serves 4.
