German Apple Pancake with Sour Cream & Lingonberries

2 apples, peeled and grated and tossed with
2 tablespoons lemon juice
1/2 cup yellow raisins
1/2 cup chopped walnuts
2 tablespoons sugar
1/4 teaspoon cinnamon

3 eggs
1 cup flour
1 cup milk
2 tablespoons melted butter
2 tablespoons sugar
1/2 teaspoon vanilla

In an oiled 10-inch, round baking pan (or skillet that can go into the oven), sauté together the first 6 ingredients, until apples are softened.

Meanwhile, beat together the remaining ingredients until nicely blended. Pour batter evenly over the apple mixture and bake in a 350° oven until omelet is puffed and golden, about 30 minutes.

Cut into wedges and serve with a spoonful of low-fat sour cream and lingonberries. Strawberries are good, too. Serves 4.
