

1 cup cottage cheese
3 eggs
1/3 cup flour
pinch of salt
2 tablespoons sugar
2 tablespoons melted butter
1 teaspoon baking powder
1/2 teaspoon vanilla
Place all the ingredients in a mixing bowl and beat with a fork until they are blended. Do not overmix.
Pour 1/4 cup batter on a lightly greased, preheated Teflon griddle. When bottom of pancake is golden brown and top is bubbly, turn and brown other side.
Serve warm with sliced strawberries and a sprinkling of toasted pecans. It is also very good with applesauce sprinkled with cinnamon. If you like syrup with your pancakes, you will enjoy the unusual Honey Butter Syrup. Makes 12 pancakes.
Honey Butter Syrup:
1 cup honey
2 tablespoons butter
2 tablespoons undiluted frozen orange juice concentrate
1 tablespoon lemon juice
1/8 teaspoon cinnamon
Combine all the ingredients in a saucepan and simmer mixture for 2 minutes. Yields about 1 1/3 cups syrup.
