

This is a delicious bread with deep, satisfying flavor. It is fruity and spicy and nice around the holidays.
1 egg
1/2 cup buttermilk
1/3 cup oil
2 cups flour
1 cup brown sugar, sifted
1 tablespoon baking powder
2 teaspoons cinnamon
1 small apple, peeled, cored and grated
3/4 cup grated carrots
1/3 cup chopped walnuts
Preheat oven to 350°. Lightly grease a 9x5-inch loaf pan. Beat together first 3 ingredients until blended. Beat in next ingredients until blended. Stir in remaining ingredients. Place batter into a greased 9x5-inch pan.
Bake in a 350° oven for about 1 hour or until a cake tester, inserted in center, comes out clean. Allow to cool for 10 minutes and then remove from the pan and continue cooling on a rack. Drizzle top with Buttermilk Glaze when cool. Yields 1 loaf.
Buttermilk Glaze:
1 tablespoon buttermilk
1/2 teaspoon vanilla
1/2 cup sifted powdered sugar
Stir together all the ingredients.
