One could never guess that this sauce is so low in calories. It is flavored with fresh fruit and juice and sparkled with spices. Serve over frozen yogurt, pancakes, French toast or sponge cake.
1 apple, peeled, cored and grated
1 teaspoon butter or margarine
1 cup apple juice
1 cup orange juice
2 tablespoons cornstarch
1 tablespoon sugar or honey
1/2 teaspoon cinnamon
1/8 teaspoon powdered cloves
1/8 teaspoon ground nutmeg
In a saucepan, sauté apple in butter until softened. Stir together juices and cornstarch until blended. Add to apple mixture with the remaining ingredients and simmer mixture, stirring, until sauce is slightly thickened and clear, about 10 minutes. Place in a jar with a tight-fitting lid and store in the refrigerator. Yields about 2 1/4 cups sauce.
