

These heavenly muffins are fragrant with cinnamon and orange and richly flavored with apples, currants and walnuts. They freeze beautifully and are nice to have on hand.
1 egg
1 cup buttermilk
1/4 cup honey
1 tablespoon oil
1/2 medium orange, grated
1 small apple, peeled, cored and grated
1/4 cup currants
1/4 cup chopped walnuts
1 1/2 cups whole wheat flour
1/2 cup Miller's bran flakes
2 teaspoons baking powder
1 teaspoon cinnamon
pinch of ground nutmeg and ground cloves
Beat together first 4 ingredients until blended. Stir in the next 4 ingredients until blended. Stir together remaining ingredients and add, all at once, stirring until blended. Do not overmix. Divide batter between 12 paper-lined muffin cups and bake at 350° for 25 minutes, or until tops are browned. Yields 12 muffins.
