

These muffins are really low in calories and one would never guess it. They are delicious and healthy, too, with whole wheat , bran, fruit and buttermilk.
2 tablespoons oil
3/4 cup buttermilk
1/2 cup sugar
1 egg
2 tablespoons grated orange peel
3/4 cup all-bran cereal
1 cup whole wheat flour
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 cup fresh or frozen cranberries, sliced in half
In the large bowl of an electric mixer, beat together first group of ingredients until mixture is blended. Stir together next 5 ingredients and add, all at once, beating just until blended. Stir in the cranberries. Divide batter between 12 paper-lined muffin cups. Bake at 400° for 20 minutes or until a cake tester, inserted in center, comes out clean. Yields 12 muffins.
To make into Peach or Apricot Muffins:
Substitute 1 cup chopped peaches or apricots for the cranberries.
