Sour Cream Orange Muffins with Orange Glaze

Tender, gossamer muffins, so full of flavor and goodness, these delicious muffins will be enjoyed by the most jaded appetites. The Orange Glaze is optional, but a lovely addition, for a brunch or luncheon buffet. 1/2 cup finely chopped walnuts is a nice optional.

1 egg
1 small orange, grated (about 6 tablespoons)
1/2 cup milk
1/2 cup sour cream
1/4 cup oil
3/4 cup sugar

2 1/4 cups flour
1 tablespoon baking powder

Preheat oven to 400°. Have ready 12 paper-lined muffin cups.

In the large bowl of an electric mixer, beat together first 6 ingredients until blended. Add the flour and baking powder and beat just until blended. (Do not overbeat.)

Divide batter between 12 paper-lined muffin cups and bake in a 400° oven for about 22 to 25 minutes or until muffins are golden brown and a cake tester, inserted in center, comes out clean. Allow to cool in pan for 10 minutes, and then remove from pan, and continue cooling on a rack. Brush tops with Orange Glaze (optional). Yields 12 muffins.

Orange Glaze:
1 1/2 tablespoons orange juice
1/3 cup sifted powdered sugar
1 tablespoon finely grated orange peel

Stir together all the ingredients until blended.
