Low-Cal Fresh Strawberry Jam

This little gem is very much like the expensive fruit spreads that are so popular. Be certain that the strawberries are well cooked through, or the jam will not last more than 2 to 3 days.

1 envelope unflavored gelatin
1/4 cup water
1/4 cup orange juice

2 tablespoons sugar or honey
2 tablespoons lemon juice
1 very thin slice lemon (about 1/8-inch)
2 cups (1 pint) strawberries, sliced

In a 1-cup metal measuring cup, soften gelatin in water and orange juice. Place cup in a larger pan with simmering water and stir until gelatin is dissolved.

Meanwhile, in a saucepan, place the remaining ingredients and simmer mixture, stirring now and again, for about 10 minutes, or until strawberries are cooked through. Discard lemon slice. Stir in gelatin mixture until thoroughly blended and simmer for 30 seconds, stirring. Allow to cool slightly and place jam in a jar with a tight-fitting lid. Store in the refrigerator. Yields about 2 cups.
