Hummus Dip with White Beans

This is a nice variation of the traditional hummus made with garbanzo beans. It is very delicious even though it contains no tahine and the oil is reduced by 2/3. Serve with pita cut into bite-size squares and triangles.

2 cans (15 ounces, each) white Great Northern beans,
thoroughly rinsed and drained
6 cloves garlic, peeled and sliced
1/3 cup fresh lemon juice
1 dash of cayenne pepper
salt and white pepper to taste
1/8 teaspoon paprika

1/3 cup olive oil or vegetable oil
2 tablespoons, or more, vegetable broth (to loosen)

Place first group of ingredients in a food processor container and blend until pureed. Slowly add the oil and continue blending, until dip is very smooth. Add a little vegetable broth if necessary to help make the mixture smooth. Place dip in an attractive bowl and surround with pita triangles. Serves 8.

To make Traditional Hummus:
Substitute 2 cans, (15 ounces, each), rinsed and drained garbanzos for the white beans.

To rinse Beans or Garbanzoa:
Pour contents of the can into a strainer. Run cold running water over the beans, shaking the strainer, until the water runs clear.
