

1 pound medium mushrooms, cleaned and stems removed
Filling:
1/4 pound low-fat cream cheese
1/4 pound goat cheese
1/2 cup garlic croutons, finely crushed
3 tablespoons chopped chives
Parmesan cheese, grated
paprika
Prepare mushrooms and place on a cookie sheet. Beat together Filling ingredients until blended. Mound mixture into mushroom caps. Sprinkle tops generously with grated Parmesan and lightly with paprika. Broil until piping hot. Yields about 24 bite-size appetizers.
