French Potato Pie with Cheese & Chives

This simple little homey dish is wholesome and very satisfying for a light lunch or supper.

1 9-inch deep dish frozen pie shell, baked in a 400° oven for about 10 minutes or until very lightly browned

1 cup mashed potatoes (can use instant mashed potatoes)
2 cups non fat cottage cheese
1/4 cup low-fat cream cheese (2 ounces)
2 eggs
1/2 cup low fat sour cream
1/3 cup grated Parmesan cheese
1/3 cup chopped chives
1 tablespoon chopped parsley
salt and pepper to taste

Prepare pie shell. Combine the remaining ingredients and beat until thoroughly blended. Pour mixture into prepared pie shell and place on a cookie sheet. Sprinkle top with a little additional grated Parmesan cheese.

Bake in a 350° oven for about 40 to 45 minutes or until top is golden brown. Serves 6.
