Quiche with Spinach Soufflé & Cheese

1 9-inch deep dish frozen pie shell, baked in a 400° oven for
about 10 minutes or until very lightly browned

1 package (10 ounces) frozen chopped spinach, defrosted
1/2 cup low fat cream cheese (4 ounces), at room temperature
1/2 cup milk
2 eggs
1/3 cup fresh bread crumbs
1/2 cup grated Parmesan cheese
1/3 cup finely chopped green onions
pinch nutmeg
salt and pepper to taste

Prepare pie shell. Combine the remaining ingredients and beat until thoroughly blended.

Pour mixture into the prepared pie shell and place pan on a cookie sheet. Bake in a 350° oven for 45 minutes or until filling is set and top is golden. Serves 6.
