

This is a pizza, made into a real pie. Nice to serve and fun to eat.
1 9-inch deep dish frozen pie shell, defrosted. Carefully lift pie shell and place it into a 10-inch quiche pan. Pat it down to fit.
1 can (1 pound) stewed tomatoes, drained
and finely chopped
1/4 pound mushrooms, thinly sliced
1 cup grated Swiss cheese (3 ounces)
1 tablespoon chopped parsley
1/4 teaspoon, each, basil and thyme flakes
1/2 cup grated Parmesan cheese
Toppings:
sliced olives, thinnest onion ring slices or capers to taste
Bake pie shell in a 400° oven for about 10 minutes or until lightly browned. Combine the next group of ingredients and toss to mix well. Spread these evenly into the prepared shell. Place olives, onion rings or capers to taste on top. Bake in a 350° oven until cheeses are melted and top is lightly browned, about 15 to 20 minutes. Serves 6.
