

1/2 cup melted butter
3/4 cup sugar
1 egg
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/8 teaspoon salt
1 cup canned pumpkin puree
1 apple, peeled and grated
1 cup chopped walnuts
1/2 cup yellow raisins
Preheat oven to 350°. Lightly grease a 9x5-inch loaf pan. In the large bowl of an electric mixer, beat together butter, sugar and egg until blended. Add the next 5 ingredients, all at once, and beat only until dry ingredients are moistened. Do not overbeat.
Place batter into a 9x5-inch greased loaf pan and bake in a 350° oven for 1 hour or until a cake tester, inserted in center, comes out clean. Allow bread to cool in pan for about 10 minutes and then remove from pan and continue cooling on a rack. When bread is cool, drizzle with Vanilla Glaze. Yields 1 loaf.
Vanilla Cream Glaze:
1 teaspoon cream
1/2 teaspoon vanilla
1/2 cup sifted powdered sugar
Stir together all the ingredients until blended.
