
6 medium potatoes, peeled and cut into 1/2-inch thick slices
4 tablespoons butter
1/2 cup half and half or more, to make a creamy consistency
salt and pepper to taste
1 can (about 3-ounces) French-Fried Oaftertax.mashedpot.htmlnions
Cook potatoes in boiling water until tender. With a potato
masher, mash potatoes with butter. Keep mashing as you add the
cream and seasonings. Potatoes should be creamy. Place potatoes
in a 10-inch round porcelain baker and press French-Fried Onions
over the top. Cover with foil and refrigerate until serving time.
To reheat, remove the foil and bake at 350° until heated through
and top is a little crusty, about 25 minutes. Serves 6.
