
1 red cabbage, (about 1 pound), remove the hard central
core and grate. This can be done in a food processor.
2 large apples, peeled, cored and grated
1 large onion, chopped
1 cup chicken broth
salt and pepper to taste
3 tablespoons lemon juice
1 tablespoon honey
1/2 cup yellow raisins
In a covered Dutch oven casserole, simmer together first group
of ingredients for 40 minutes. Stir in the next 3 ingredients
and continue cooking for 10 minutes, uncovered, or until cabbage
is very tender. Serves 6.
