
6 tomatoes, thinly sliced
6 thin slices red onion, separated into rings
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
4 tablespoons lemon juice
1 clove garlic, put through a press
2 tablespoons parsley leaves
1 teaspoon sweet basil leaves
salt and freshly ground pepper to taste
Place tomatoes and onion in a bowl. In a jar, shake together
the remaining ingredients. Pour dressing over tomatoes and onions
and toss to coat well. Refrigerate salad for several hours to
allow flavors to blend. Serves 6.
