Baked Red Onions with Thyme

Onions, roasted with herbs and sparkled with a splash of vinegar, is a nice dish to serve with roasted meats or chicken.

6 medium red onions, peeled and cut into 1/2-inch slices
2 tablespoons olive oil
2 tablespoons vinegar
1 teaspoon sugar
1 teaspoon dried thyme flakes
salt and pepper to taste

In a large bowl, toss together all the ingredients until onions are nicely coated. Place mixture in a 9x13-inch baking pan, and bake at 400° for 20 minutes, turning now and again, until onions are tender. Broil onions, about 4-inches from the heat for a few minutes on each side, or until onions are flecked with brown. Serves 6.
