Chewy French Bread Sticks with Cheese

Try this chewy delicious bread stick some evening soon. They are exceedingly easy to prepare and the dough is easily handled and does not need to rise. Tops can be sprinkled with sesame or poppy seeds, onion flakes, garlic chips, dill weed, thyme flakes, coarse salt or any flavor that will match your meal.

1 1/2 cups lukewarm water (105°)
2 teaspoons sugar
1 envelope dry yeast

4 cups flour
3/4 teaspoon salt

1 egg, beaten
grated Parmesan cheese
coarse salt

In a large bowl of an electric mixer, place water, sugar and yeast and allow mixture to rest for 5 minutes or until yeast is softened. Add flour and salt and beat until blended. Use a dough hook, or knead by hand until dough is smooth and soft, about 5 minutes. Do not let dough rise.

Divide dough into 16 pieces. Roll each piece of dough into 1/4-inch thick rope and place on a greased cookie sheet. Brush tops with beaten egg and sprinkle top with grated Parmesan.

Bake in a 400° oven for about 15 minutes or until bread sticks are lightly browned. Yields 16 bread sticks.
