

3 eggs
1 cup milk
1 cup flour
1/4 teaspoon salt
2 tablespoons dried chopped chives
1/4 cup grated Parmesan cheese
2 tablespoons butter, melted
Beat together the first 6 ingredients until mixture is blended. Do not overbeat. Let batter rest for 30 minutes.
Spread butter in a 12-inch round baker and pour in the batter. Bake in 400° oven for about 30 minutes or until popover is puffed and golden. Serve at once.
Serve with sweet whipped butter. Excellent with soups or salads
Note: - Batter can be made earlier in the day and refrigerated. However, bake just before serving or popover will deflate.
