

This is one of my favorite breads. It is fragrant and delicious and slices beautifully. It is filled with orange and raisins and nuts and lots of spice and everything nice.
2 eggs
1/2 orange, grated. Remove any large pieces of membrane.
1/2 cup orange juice
1 1/8 cups sugar
1 cup canned pumpkin
1/4 cup butter, softened (1/2 stick)
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons pumpkin pie spice
1 cup yellow raisins
1 cup chopped walnuts
In the large bowl of an electric mixer, beat together first 6 ingredients until blended. Stir in the remaining ingredients by hand until flour is just moistened. Do not overmix. Pour batter into 4 greased baby loaf pans, 6x3 1/2 x 2 inches.
Bake in a 350° oven for about 40 to 45 minutes or until a cake tester, inserted in center, comes out clean. Remove from pans and cool on a rack.. Serve "natural" or with a lovely orange glaze. Yields 4 loaves.
Orange Glaze:
2 tablespoons orange juice
2 tablespoons grated orange peel
1 1/4 cups sifted powdered sugar
Combine all the ingredients until blended. Will yield enough glaze to top 4 baby loaves.
