

This is an exceptionally easy bread that is filled with all kinds of good things that are considered "good for you", too. Whole wheat flour, oranges, honey, sunflower seeds and raisins all put together, produces a rather delicious loaf.
Liquid Mixture:
1 1/2 cups milk
2 tablespoons lemon juice
1/2 orange, grated. Remove any large pieces of membrane.
1 egg, beaten
2 tablespoons honey
Dry Mixture:
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
3/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup toasted sunflower seeds
1/2 cup raisins
Place all the liquid ingredients in one bowl and stir until blended. Place all the dry ingredients into another bowl and toss to combine. Combine the two mixtures and stir until the dry ingredients are moistened. Do not leave lumpy and do not overmix. About 30 seconds of stirring should do it. Stir in the sunflower seeds and raisins.
Pour batter into a 1 1/2-quart soufflé dish that has been greased and floured. Bake in a 350° oven for about 50 minutes or until top is a lovely golden brown and a cake tester, inserted in center, comes out clean. Top will crack; this is normal. Serve with Sweet Whipped Butter and Honey. Yields one 7-inch loaf.
