

1 1/4 cups flour
1 1/4 cups sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
2 eggs
1/2 cup butter, softened
1 teaspoon vanilla
1 cup sour cream
1 cup canned pumpkin
1/2 orange, grated. Remove any large pieces of membrane.
1 cup chopped walnuts
1 cup golden raisins
Combine flour, sugar, baking powder, salt and spice. Beat together eggs, butter, vanilla, sour cream, pumpkin and grated orange. Combine egg mixture and dry ingredients and stir until blended. Stir in nuts and raisins.
Divide mixture between 24 paper-lined muffin cups. Bake in a 400° oven for 30 minutes or until a cake tester, inserted in center, comes out clean. Serve warm with sweet butter. Yields 24 medium muffins.
Sweet Whipped Butter & Honey:
1/2 cup butter, (1 stick)
1/4 cup honey
1 tablespoon frozen orange juice concentrate
Beat butter until light and fluffy. Beat in
remaining ingredients until blended. Place butter into a pretty
bowl and refrigerate until serving time. Remove from the refrigerator
10 minutes before serving. Yields 3/4 cup butter.
