

This cake assembles in minutes, yet it tastes as if it took hours to prepare. It is one of the most delicious and flavorful with the rich taste of orange and apple. It is a low cake, so don't think anything went wrong.
2 eggs
3/4 cup sugar
1 cup chopped walnuts
1/4 cup flour
1 teaspoon baking powder
1/2 orange, grated (3 tablespoons fruit,
juice and peel)
1 medium apple, peeled and grated
In a food processor, blend together first 5 ingredients for 40 seconds, or until nuts are ground. Add the orange and apple and blend for 15 seconds, or until fruit is finely chopped. Spread batter into a paper-lined 10-inch springform pan and bake at 350-degrees for about 20 to 25 minutes, or until top is browned. Allow to cool in pan. When cool, remove from pan and drizzle top with Orange Glaze. Serves 12.
Orange Glaze:
Stir together 1/4 cup sifted powdered sugar, 1 1/2 teaspoons orange
juice and 2 teaspoons grated orange zest until blended.
