Angel Cake with Fresh Strawberry Sauce (92), 212

This is perhaps one of the most benign of cakes, very light, very low in calories and delightful with fresh fruit and frozen non-fat yogurt or ice milk. It is a generous portion, as well.

6 egg whites, at room temperature
1/4 cup sugar
3/4 teaspoon cream of tartar
3/4 teaspoon vanilla or lemon juice

1/2 cup flour
1/4 cup sugar

Beat egg whites until foamy. Continue beating, adding sugar, 1 tablespoon at a time until whites are stiff. Beat in cream of tartar and flavoring. Stir together flour and 1/4 cup sugar and gently fold into egg white mixture.

Spread batter evenly into an ungreased 10-inch tube pan and bake at 375-degrees for about 20 minutes, or until top is golden brown. Remove from oven and invert cake until cooled. Serve with a tablespoonful of Fresh Strawberry Sauce or 2 tablespoons softened frozen non-fat strawberry yogurt, or both. Serves 12.

Fresh Strawberry Sauce:
1 cup strawberries
1 teaspoon sugar
2 tablespoons orange juice
2 teaspoons lemon juice

In a blender or food processor, puree strawberries with sugar and juices. Refrigerate until serving time. Yields about 3/4 cup (12 tablespoons) sauce.

To prepare Chocolate Angel Cake:
Reduce flour to 3/8 cup and add 2 tablespoons sifted cocoa. All other instructions remain the same.

Frozen Non-fat Yogurt, about 14 calories per 2 tablespoons
Chocolate Angel Cake, about 84 calories per serving
