

Cinnamon-Marbled Orange Walnut Cake (166), 215
This lovely coffeecake is truly satisfying with the flavors of cinnamon and orange. The nutty texture adds a little crunch. Leftovers can be sliced thin and toasted.
1/4 cup oil
1/4 cup orange juice
1/2 cup water
3 tablespoons grated orange peel
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 3/4 cups flour
2 1/2 teaspoons baking powder
1/4 cup chopped walnuts
2 teaspoons cinnamon
1 tablespoon sugar
Beat together first group of ingredients until blended. Combine the next 2 ingredients and add, all at once, beating until blended. Stir in the walnuts. Pour 1/2 the batter into a lightly greased 10-inch tube pan. Combine cinnamon and sugar and sprinkle over the first layer. Spoon the remaining batter evenly over the cinnamon mixture, and spread to even.
Bake at 350-degrees for 35 to 40 minutes, or
until a cake tester, inserted in center, comes out clean. Allow
to cool in pan. Remove from pan and sprinkle with 1 teaspoon sifted
powdered sugar. Serves 12.
