

2 tablespoons oil
2/3 cup sugar
1 cup non-fat buttermilk
1 egg
1/2 orange grated (about 3 tablespoons fruit, juice and peel)
1 medium apple, peeled and grated
1 1/2 cups oats
1 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
In the large bowl of an electric mixer,
beat together first 4 ingredients until blended. Stir in orange
and apple. Stir together the remaining ingredients and add, all
at once, beating until blended. Do not overbeat.
Spread batter evenly into a 9x13-inch non-stick baking pan and bake at 350-degrees for 30 minutes, or until top is golden brown. Allow to cool in pan. When cool, drizzle top with Orange Glaze. Serves 24.
Orange Glaze:
1/2 cup sifted powdered sugar
1 tablespoon orange juice
2 teaspoons grated orange zest (orange part of the peel)
Stir together all the ingredients until blended.
