

This is a thin, delicate spongecake that is an excellent base for fruit, frozen non-fat yogurt or frozen non-fat ice milk. It is exceedingly low in calories (less than an average cookie) and very satisfying. Piled high with 1/2 cup frozen yogurt, which is about (64 calories) and drizzled with 1 tablespoon Low-Calorie Strawberry Sauce (10 calories), no one could feel deprived. And the total for the dessert is a mere 114 calories.
2 egg whites
1/3 cup sifted powdered sugar
1/2 teaspoon vanilla
2 egg yolks
1/4 cup flour
Beat whites until foamy. Slowly add powdered
sugar while beating until whites are stiff. Beat in vanilla. Beat
in yolks, one at a time, until nicely blended. Fold in the flour.
Spread batter into a wax paper lined l0 inch springform pan and
bake at 350 degrees for 10 minutes. Invert onto a serving platter
and remove wax paper. Yields 10 servings.
