

A delightful cake to serve around the winter holidays. This cake is very moist, so don't think anything went wrong. A tablespoon or two of Low-Calorie Whipped Cream is nice. Serve with a cup of spicy, hot cider and who would guess we're counting...
1 egg
1/2 cup sugar
3 tablespoons oil
1 1/4 cups unsweetened applesauce
2 teaspoons vanilla
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1/4 cup dried currants
1/4 cup chopped walnuts
In the large bowl of an electric mixer, beat
together first 5 ingredients until blended. Combine the remaining
ingredients and add, all at once, beating until nicely blended.
Do not overmix. Pour batter into a lightly greased 10-inch tube
pan and bake at 350-degrees for 35 to 40 minutes, or until a cake
tester, inserted in center, comes out clean. Allow to cool in
pan. When cool, remove from pan and sift 1 teaspoon powdered sugar
on top. Serves 12.
