Peach & Macaroon Crumb Cobbler (102), 220

Apples can be substituted for the peaches in this recipe. If you enjoy the fruit simply baked, then omit the cookie crumbs. 2 tablespoons coarsely chopped walnuts can be added to the cookie crumbs. It is an addition I recommend, as the taste is heightened far above the calories consumed.

6 medium-sized peaches, peeled, pitted and thinly-sliced or
1-pound bag frozen sliced unsweetened peaches, thawed
1/4 cup orange juice
2 teaspoons cinnamon sugar

1/2 cup macaroon cookie crumbs
2 tablespoons coarsely chopped walnuts (optional)
1/2 teaspoon ground cinnamon
dash each of ground nutmeg and ground cloves

In a 10-inch round baking pan or pie pan, lay peaches in a circle. Pour orange juice over the peaches and sprinkle with cinnamon sugar. Bake in a 350-degree oven for 15 minutes.

Meanwhile toss together crumbs (optional walnuts) and spices and sprinkle over the peaches. Return to oven and bake for an additional l5 minutes, or until crumbs are lightly browned and peaches are tender. Serves 6.
