

This is another basic recipe that can be prepared with any number of fruits. Peaches, apricots, apples, pears, plums all work well with the oatmeal topping.
1/3 cup whole wheat flour
1/2 cup quick-cooking oats (not instant oats)
1/4 cup sugar
2 tablespoons melted butter
1 teaspoon vanilla
2 pints blueberries (fresh or frozen)
1/4 cup sugar (optional)
1 tablespoon grated lemon zest
1 tablespoon lemon juice
Stir together first 5 ingredients until mixture
is crumbly. Toss together blueberries with sugar (optional), lemon
juice and zest and place in a 10-inch round baking pan. Sprinkle
top with oat mixture. Bake at 350-degrees for 30 minutes. Serves
8.
