

4 peaches, washed, pitted and thinly sliced.
Do not peel. (about 1 pound)
4 tablespoons orange juice
1/2 cup quick-cooking oats
4 tablespoons dark brown sugar
1/2 teaspoon cinnamon
4 teaspoons melted butter
In 4 individual ramekins, divide the peaches
and drizzle with 1 tablespoon orange juice. Stir together the
remaining ingredients and divide mixture over the peaches. Place
ramekins on a cookie sheet and bake at 350-degrees for about 20
to 25 minutes or until peaches are soft and top is browned. Serve
warm, topped with 2 tablespoons of Vanilla Cream Sauce. Serves
4.

Vanilla Cream Sauce:
You can make a delicious dessert sauce by allowing frozen vanilla
non-fat yogurt or vanilla ice milk to partially melt in the refrigerator.
Using as little as 2 tablespoons will enrich a dessert. It tastes
much like partially whipped cream but with little or no fat. Remove
the frozen yogurt or ice milk from the freezer and place in the
refrigerator about 10 minutes before serving.
