

The world would be a very sad place without a brownie once in a while. These are low-calorie with half the sugar and half the fat. Not the devilish brownie, but a compromise. Adding the chocolate chips, adds 6 calories per brownie (and is recommended)...adding the walnuts, adds 7 calories per brownie. Raspberries are fabulous and festive. These are not sweet, so if you are serving them plain, dust the top with a little sifted powdered sugar. Enjoy these once in a while and in moderation.
1/2 cup butter (1 stick), at room temperature
1/2 cup sugar
2 eggs
2 teaspoons vanilla
1/2 cup all-purpose flour
4 tablespoons cocoa
1/2 teaspoon baking powder
Optional:
1/4 cup chopped walnuts
1/3 cup semi-sweet chocolate chips
1/2 cup fresh raspberries
Beat together butter and sugar until blended. Beat in eggs and vanilla until blended. Beat in remaining ingredients until blended. Don't overbeat, or they will be too airy. Stir in walnuts or chocolate chips or raspberries (optional). Spread batter into a very lightly oiled 8x8-inch baking pan and bake at 350-degrees for 18 to 20 minutes or until top looks dry. Do not overbake. Divide each side into fifths and cut into 25 squares when cool. Sprinkle with a little sifted powdered sugar to serve.
