

These are nice to serve as an after school snack and can substitute for a breakfast bar, made as they are with oat bran, whole wheat flour and yogurt. These are soft and cake-like cookies. Normally, cookies made with 2 cups of flour would use I cup of butter or butter. Using only 1/4 cup butter saves 1200 calories.
1/4 cup butter, softened
1/2 cup sugar
1 egg
2/3 cup unflavored non-fat yogurt
1 teaspoon vanilla
1 cup whole wheat flour
1 cup oat bran
2 teaspoons baking powder
1/2 cup chopped apricots (2 ounces)
Beat together first group of ingredients until
blended. Beat in the remaining ingredients until blended. Spread
batter into a non-stick 9x13-inch baking pan and bake at 350 degrees
for 20 minutes. Allow to cool in pan. When cool, cut into 1 1/2-inch
squares. Yields 48 cookies.
