Oatmeal & Raisin Bar Cookies (35), 226

This chewy cookie, full of oats and raisins, can be prepared and baked in minutes. It is very good with milk and for snacking after school. It tastes very much like the classic oatmeal raisin cookie, but far less sweet. If you add 2 teaspoons of cinnamon to the batter, the cookie takes on a totally different character.

1/4 cup butter, softened
1/2 cup sugar
1 egg
2/3 cup low-fat milk
1 teaspoon vanilla

1 cup whole wheat flour
1 1/2 cups oats
2 teaspoons baking powder
1/2 cup chopped raisins

Beat together first group of ingredients until blended. Beat in the remaining ingredients until blended. Spread batter evenly into a non-stick 9x13-inch baking pan and bake at 350-degrees for 15 minutes or until top looks dry and lightly browned. Allow to cool in pan. When cool, cut into 48 bars.
