Ginger-Spice Apple Cookies (56), 227

Please don't expect a Toll House cookie for this one. It is definitely not sweet, but fruity and spicy. However, you are saving 1 1/2 cups of sugar, or 1230 calories. An extra 1/2 cup of brown sugar can be added, increasing each cookie by about 10 calories.

3/4 cup butter or butter, softened
1/2 cup brown sugar
1 egg, beaten
1 teaspoon vanilla

1 apple, peeled, cored and grated
1/2 small orange, grated, about 3 tablespoons. Use fruit, juice
and peel

2 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves

2 tablespoons cinnamon sugar

Beat together first 4 ingredients until blended. Stir in apple and orange. Mix together the next 5 ingredients, and beat into butter mixture until blended.

Spread batter evenly into a non-stick 9x13-inch baking pan and sprinkle top evenly with cinnamon sugar. Bake at 350-degrees for 20 minutes or until top is lightly browned. Do not overbake. Cut into 40 bars. Yields 40 cookies.
