

In this recipe, the orange juice and honey is baked until it becomes very concentrated and intense in flavor. Crumbs and walnuts can be omitted, but they are a nice addition.
1 cup orange juice
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
6 apples, peeled, cored and sliced (about 4-ounces, each)
6 tablespoons macaroon cookie crumbs (3
cookies)
6 tablespoons finely chopped walnuts
Stir together first 5 ingredients until blended.
Place apples in a 10x2-inch round baking pan and place orange
juice mixture over all. Bake in a 350-degree oven until apples
are tender and most of the juice has evaporated, about 40 minutes.
Sprinkle top with cookie crumbs and walnuts and bake an additional
5 minutes. Serve warm (not hot), at room temperature or cold.
Serves 8.

Substituting Fruits:
To Bake 6 Pears: Bake at 350-degrees for 20 minutes.
To Bake 10 Peaches: Bake at 350-degrees for 30 minutes.
To Bake 10 Apricots: Bake at 350-degrees for 30 minutes.
Substituting Juice: 1 cup apricot nectar or
1 cup apple juice
can be substituted for the orange juice.
