Baked Apples with Orange, Macaroon, Walnut (120), 229

In this recipe, the orange juice and honey is baked until it becomes very concentrated and intense in flavor. Crumbs and walnuts can be omitted, but they are a nice addition.

1 cup orange juice
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
6 apples, peeled, cored and sliced (about 4-ounces, each)

6 tablespoons macaroon cookie crumbs (3 cookies)
6 tablespoons finely chopped walnuts

Stir together first 5 ingredients until blended. Place apples in a 10x2-inch round baking pan and place orange juice mixture over all. Bake in a 350-degree oven until apples are tender and most of the juice has evaporated, about 40 minutes. Sprinkle top with cookie crumbs and walnuts and bake an additional 5 minutes. Serve warm (not hot), at room temperature or cold. Serves 8.

Substituting Fruits:
To Bake 6 Pears: Bake at 350-degrees for 20 minutes.
To Bake 10 Peaches: Bake at 350-degrees for 30 minutes.
To Bake 10 Apricots: Bake at 350-degrees for 30 minutes.

Substituting Juice: 1 cup apricot nectar or 1 cup apple juice
can be substituted for the orange juice.
