

Of all fruit desserts, this is one of the easiest and the best. It is very satisfying and wonderful served "natural" or as a topping for ice cream or sponge cake. It can be served warm or cold, but not hot. I recommend a porcelain baking dish for this recipe, as it can be baked and served without changing pans.
6 medium apples, peeled, cored and sliced
(4 ounces, each)
1 cup unsweetened orange juice
1 tablespoon grated orange peel
2 teaspoons sugar
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves or nutmeg (optional)
In a 10-inch round baking dish, place apples evenly. Stir together the remaining ingredients and pour over the apples. Bake in a 350-degree oven for about 40 minutes. Apples will be tender (not mushy) and orange juice will have thickened to a syrup. Serves 6.

To prepare this as an Apple
Cobbler:
Sprinkle top with 1/4-cup macaroon cookie crumb (about 2 cookies)
after 30 minutes of baking. Continue baking for 10 minutes. (Add 20 calories per serving.)
To prepare this as Apple
Sauce:
Cover baking dish with foil and bake for an additional 20 minutes
or until apples are very soft. (No change in calories.)
To prepare this as a Danish-Style
Apple Cake:
Chop the apples and bake them as above. Sprinkle the baked apples
with 10 crushed vanilla wafers made into crumbs. Drizzle top with
2 tablespoons melted raspberry spread and 1 tablespoon chopped
walnuts. Bake at 350-degrees for 20 minutes.

Option 4. Serve
with 1/4 cup of non-fat Vanilla Frozen Yogurt and a sprinkling
of cinnamon.
