

What could be easier than freezing sliced bananas and whipping them up in a food processor to produce a delicious frozen dessert? There are many variations to this theme. You can add a few frozen strawberries to add color and flavor. A few drops of vanilla gives it a totally different air. A teaspoon or 2 of almonds or pecans, finely chopped, are an excellent addition. A little orange peel, cinnamon or nutmeg adds interest and excitement.
2 large bananas, peeled and sliced
1/4 teaspoon vanilla
Freeze bananas in a plastic freezer bag. (If
freezing for more than 2 or 3 days, then brush bananas with a
little lemon juice, so that they do not darken.) In a food processor,
whip bananas and vanilla until mixture is as smooth as silk. If
necessary, add a few drops of non-fat milk to loosen. Serve with
a few raspberries or sliced strawberries on top. Serves 4.
