

This is a basic recipe for making ice with simple syrup. It is exceedingly low in calories and a refreshing end to a meal but not substantial enough for a satisfying dessert. I would suggest serving fresh fruit or cookies with ices, sherbets or granités. For an especially festive touch, serve a scoop of ice in a stemmed glass and pour 1 or 2 ounces of champagne on top. Serve with small spoons or colorful straws for sipping.
Ices are best made in an ice-cream maker according to the manufacturer's instructions. Ice cream makers produce a smoother more velvety ice. Ices can be prepared in a home freezer, but if left too long, they tend to freeze solid and are difficult to serve.
Simple Syrup:
2 cups water
1/2 cup sugar
Flavoring:
1/2 cup lemon juice
1 tablespoon grated lemon zest (the thin yellow outer layer of
the peel)
Simmer together water and sugar until sugar
is dissolved. Stir in lemon and zest. Refrigerate until ready
to prepare. Freeze in an ice-cream maker, following the instructions
of the manufacturer. Serves 6.

Orange Ice:
Substitute 1/2 cup undiluted frozen orange juice for the lemon
juice and use orange zest.
Lime Ice:
Substitute 1/2 cup lime juice for the lemon juice and use lime
zest.
Apple Ice:
Substitute 1/2 cup undiluted frozen apple juice for the lemon
juice.
