

2 cups unsweetened pineapple juice
2 egg whites
1 tablespoon sugar
In a plastic bowl, chill pineapple juice in
freezer until mushy. Beat egg whites until foamy. Continue beating,
adding the sugar slowly, until whites are a stiff meringue. Beat
in pineapple juice. (Egg whites will deflate a bit. This is O.K.)
Place in an ice cream maker and freeze according to manufacturer's
instructions. Serves 6.
