Basic Tea Sherbet (24), 235

Did you know that herbal teas are a lovely flavor base for ices or sherbets? There are infinite varieties and combinations you can use. Orange, lemon, spice or almond flavored teas are especially delicious. The addition of the egg white gives it a creamier texture with very few added calories. The following is basic. Use your own favorite flavors.

2 orange cinnamon herbal tea bags
2 lemon or almond herbal tea bags
2 cups boiling water

1/2 cup orange juice
1/4 cup lemon juice
1 tablespoon sugar

1 egg white
1 teaspoon sugar

In a bowl, stir together tea bags and water and allow to steep for 5 minutes. Discard tea bags and stir in juices and sugar, stirring until sugar is dissolved. Place mixture in an ice-cream maker and start to freeze according to manufacturer's instructions.

Meanwhile beat the egg white with the 1 teaspoon of sugar until it is stiff, but not dry. Stir beaten egg white into the tea mixture after about 10 minutes of churning. Continue freezing according to manufacturer's instructions. Serves 6.
