Oatmeal & Raisin Cookie (58), 236

While these are nor markedly low in calories, they are made with oats, wheat germ and whole wheat flour, with very little fat or sugar.

1/4 cup softened butter
1/3 cup dark brown sugar
1 egg
1 teaspoon vanilla

3/4 cup rolled oats
1/3 cup wheat germ
1/3 cup whole wheat flour
1/2 teaspoon baking powder
1/3 cup raisins

In the large bowl of an electric mixer, beat together first 4 ingredients until nicely blended. Add the remaining ingredients and beat until blended. Drop batter (it will be very thick and crumbly) by the heaping teaspoon onto a non-stick baking pan, and bake at 350 degrees for about 12 minutes or until tops are just beginning to take on color. Remove from pan and cool on brown paper. Yields 24 cookies.
