

At about 70 calories, a small cookie
may be added and total dessert calories will still remain low.
1/2 cup orange juice
1 1/3 envelopes unflavored gelatin (1 tablespoon plus 1 teaspoon)
1 teaspoon pumpkin pie spice
3 tablespoons sugar
1 cup canned pumpkin (pureed)
1 cup unflavored non-fat yogurt
4 tablespoons grated orange (use fruit, juice and peel)
2 teaspoons vanilla
In a metal measuring cup, soften gelatin in orange juice. Place metal cup in a larger pan with simmering water, and stir until gelatin is totally dissolved. (Little dots of gelatin will no longer appear on the spoon.) Stir in pumpkin pie spice and sugar, and stir until sugar is dissolved.
In a bowl, stir together the remaining ingredients until blended. Stir in the dissolved gelatin until blended. Divide mixture between 6 lovely stemmed glasses and refrigerate until firm. Serve with sprinkling (1 teaspoon) of macaroon cookie crumbs on top (optional). Serves 6.
