Basic Fruit Soufflé (39), 240

If you are looking for a dessert that is exceedingly low in calories and is attractive and festive, this is a good one to consider. It is glorious when taken from the oven all puffed and flecked with brown. At only 39 calories per serving, a cookie is a nice accompaniment and the total will still be under 100.

1 cup pureed stewed fruit, (peaches, apricots, apples or pears)
about 1/2 pound, fresh or canned*
1 teaspoon grated lemon zest
2 teaspoons lemon juice
1 teaspoon cornstarch, sifted

4 egg whites
1/4 teaspoon cream of tartar
2 tablespoons sugar

In a bowl, stir together first 4 ingredients. Beat egg whites until foamy. Beat in cream of tartar. Gradually beat in the sugar and continue beating at high speed until whites hold stiff peaks. Place a dollop of beaten whites into fruit mixture to lighten it and then fold in the remaining whites.

Divide mixture between 6 individual ramekins and bake at 350-degrees for 20 minutes or until puffed and golden. Serve at once with 1 tablespoon or 2 of crushed strawberries or partially melted ice milk as a sauce. Serves 6.

*To stew fruit:
If you are using canned fruits, (apricots, peaches, apples, pears) you only need to drain and puree them in a food processor.

If you are using fresh fruit, peel, core and thinly slice it. Cook it in a covered saucepan with 1/4 cup orange juice and a sprinkling of cinnamon until it is tender, about 20 minutes. Drain and puree in a food processor.
