

In my numerous experiments to heighten taste and lower calories and cholesterol, this thick yummy sauce is one of the most pleasant discoveries. It is a great sauce to serve over non-fat frozen yogurt, spongecake, or iced milk. Please don't think it will replace a hot fudge sauce, but it is surprisingly delicious and very satisfying. At a very low 14 calories per teaspoon, with no fat, no cholesterol and NO sugar, it is a real treat. A dessert can become very extravagant with the addition of only 2 teaspoons of sauce. Any fruity spread, made with fruit juice, can be used. The ones I found best were seedless red raspberry and seedless black raspberry. Apricot was also quite good. The principle is simple. Fruit made with juice sweetens the cocoa which holds the dominant taste. The sauce has overtones of the fruity spread used, but its taste is predominantly chocolate.
1/2 cup seedless red raspberry fruit spread
(made with fruit juice)
1 tablespoon sifted cocoa
Stir together both ingredients. Heat in the
microwave for 1/2 -minute or heat in a saucepan, over low heat,
until fruit is very soft. Stir once again. Spoon warm sauce over
desserts as noted above. Yields 24 teaspoons sauce.
