

3 cups espresso, freshly brewed or made from instant coffee, and sweetened with 2 teaspoons sugar. (Decaffeinated espresso coffee can be found in most markets.)
4 teaspoons Creme de Cacao liqueur
1/2 cup cold non-fat milk, whipped in a processor until thick sprinkling of cinnamon and sifted cocoa
Divide hot coffee between 4 espresso glasses.
Float 1 teaspoon of liqueur over each and top with whipped non-fat
milk and a sprinkling of cinnamon and cocoa. True, cappuccino
is made with foamy hot milk, but whipped non fat milk will not
chill it markedly and it is easily made without special equipment.
Serves 4.
