

This serves well on a buffet, for brunch or lunch. It is a tempting combination of vegetables, cheese, eggs, yogurt, bread and a little oil...a little from each food group.
l cup part-skimmed Ricotta cheese
l/4 cup unflavored non-fat yogurt
1 egg
1 slice bread, (1 ounce) made into crumbs
l/3 cup grated Parmesan cheese
l/4 cup chopped chives
1 package (10 ounces) frozen spinach, defrosted
and drained
1 jar (6 ounces) marinated artichoke hearts, drained, rinsed
and cut into fourths
pepper to taste
l teaspoon oil
Stir together first 6 ingredients until blended. Stir in spinach, artichokes and pepper. Spread mixture into an oiled l0-inch deep-dish pie plate and bake in a 350-degree oven for about 40 to 45 minutes or until top is golden brown. Cut into wedges to serve. Serves 8.
