Tomatoes Stuffed with Turkey in Light Tomato Sauce

Using the ground turkey meat instead of beef reduces the number of calories and cholesterol. But the taste is divine. This is a good dish to consider serving as a main course with rice or as an accompaniment to dinner.

8 medium-sized firm tomatoes, 1 1/2 pounds

1/2 pound ground turkey, white meat
1 slice bread (1 ounce) made into crumbs
1 small onion, grated
1 egg, beaten
1 tablespoon chopped parsley
pepper to taste

Cut l/4-inch off the tops of the tomatoes and scoop out pulp. Chop tomato pulp coarsely and set it aside for the sauce. Combine the remaining ingredients until blended and stuff tomatoes loosely with turkey mixture.

In an 10-inch round oven-proof casserole, place the tomatoes in one layer. Spoon Light Tomato Sauce over the top and bake in a 350-degree oven for about 30 minutes, or until meat is cooked through. Serves 4.

Light Tomato Sauce:
1 teaspoon oil
reserved chopped tomato pulp
1 can (1 pound) stewed tomatoes, chopped and drained. Reserve
juice for another use.
1/4 teaspoon, each Italian Herb Seasoning and sweet basil flakes
1/8 teaspoon, each, garlic powder and onion powder
pinch of cayenne pepper
freshly ground black pepper to taste

Stir together all the ingredients until blended
